In a recent move, we misplaced our simple remote. I ordered a new one, which came promptly in the mail. Now I cannot figure out how to pair it with our ROKU stick. I can't even get access the wi-fi, since I can't pair the remote, and cannot get any instructions on the TV screen. I fell like I am going in circles.
Have you tried factory resetting the Roku stick?
What is the model number of the Roku "stick"?
If your Roku device is a Streaming Stick model, (ie. device attaches to TV via HDMI directly w/o need of a HDMI cable), then you will need a wifi Roku Voice Remote, not a Simple Remote. (these devices require communication to the remote via RF/wifi. Cannot use an IR/infrared remote).
If you have another model in the "player" line such as Express, Premiere, Ultra, etc. (these come equipped with a HDMI cable required from device to TV), then you can use a Simple Remote with these.

Try renaming your new wifi (in the router settings) so that your wifi SSID (network name) matches that of your old/previous one. Do the same for the wifi password. Then restart both the router and password. If successful, the Roku device should now be able to automatically connect using the Roku mobile app which you can use until you get/locate your missing remote. (Roku remembers last-known connected network).

@arthuraxPlease state the Roku model number and whether you have the log in/password to the router. If it modem and router are service provider gear, there's a good chance the issue is associated with channel congestion. One of the best ways to find out is by installing WiFi Analyzer for Android or something similar if you use an iPhone. Once installed, open the app and take note of how many others are using the same channel/band, then log into the router and DISABLE the 'auto' feature for channel selection and choose a channel with less congestion.
