My Roku express is all of a sudden turning on a TV in another room that also is hooked up to a Roku express. These two TVs are separated by a solid wall.

What Roku Express device are you using in both of your rooms? It's possible that the IR signal is being bounced off the walls of your house and interacting with your other Roku device.
