The Roku app has nothing to do with the remotes. It has remote functionality, but there's no interaction between your Roku remotes and the app. It's simply an app that, among other things, allows your phone to act as a remote.
The app isn't seeing your remote when you go to that section of the app. It's seeing the Roku devices, regardless of whether the remote exists. It automatically adds them when it sees them on the network. You have to be on the same network, of course.
It will continue to show previous Roku devices. There's no easy way to remove them from listing on the app.
