What do mean by "interchangeable"?
Unless my understanding is way off base here:
Within the limits described by @Tivoburkee each of those remotes can be paired with any one of your Roku sticks. Once paired, each remote will only control the Stick it is paired to.
If any are purple, no. If they're all black yes. If all are purple then yes too.

Have 5 of same streaming sticks, connected to 5 of exact same model TV sets. Can I set up remotes so thew interchange and work on any of the sets?
So basically one remote would work on all sets?
Not the roku commands, wifi remotes only kind of remote roku stick responds to are only paired to one roku at a time. If the tv's are the same brand and the roku remote has tv controls it will control all of the same models of tv without need to reprogram. Which is kind of useless if you have reprogram them for roku anyways.

You don't have to. You can use multiple remotes on a single Roku device.
Which Roku device do you have? Model number and Roku Software version will be helpful. Settings > System > About
