I have a Roku Premiere (4620 series). When I play movies on Kanopy and Criterion Channel, the output indicated on my soundbar is stereo. Channels like Disney+, HBO Max, Netflix and Amazon Prime output 5.1 surround.
The interesting thing is when I play the same movies on Kanopy and Criterion from my iPhone via Airplay, the output is 5.1 surround (Dolby audio/Dolby Digital). This would seem to indicate that this is an issue with Kanopy and Criterion Channel on Roku. Is this correct? I have checked that I have the latest updates of those channels. I also checked that I have Auto selected in Settings>Audio>Audio mode and Auto Detect for Settings>Audio>HDMI. I also have Volume mode set to Off.
What could be the problem?

From discussions elsewhere, I believe I would need a Roku Ultra to resolve this issue. I suspect that Kanopy and Criterion Channel streams only in DD+ and my Roku Premiere can not transcode the signal to Dolby Digital. The Roku Ultra 2020 4800 model has this ability from what I gather.
Those are actually 2 channels I watch.

I dont think 5.1 really offers much. Its personal taste I suppose.
Personal taste, for sure. But I'm not picky about it. I'm happy with just regular Dolby Digital/DTS. I don't require Dolby Atmos or even DD+. I may upgrade my setup in the future but for now regular 5.1 surround is fine.
