Just set up my Roku, asked me a bunch of questions, told it I had DISH. Did not press on any ADD buttons. It set up and downloaded about 35 channels. I did not order any but the FREE ones. Were these the free ones? If not an they were paid for, how can I delete them ?

When you tell it what provider you have it just downloads a bunch of relevant/suggested channels. Those channels are generally free to download, but may require some kind of authentication or subscription to watch anything. You can remove a channel by highlighting it on the Home Screen and then press * on your remote. There should be an option to "Remove channel".
I'd suggest adding a PIN to your account so you don't inadvertently purchase something without realizing it: https://my.roku.com/account/pin
