IP address will depend on where it it when it connects to the Internet. Your IP address would be different than the IP address a thief using the device would have.
The serial number is likely listed on https://my.roku.com/ near the bottom of your account. At least, unless and until the thief does a factory reset and adds the device to his account.
The serial number would probably be listed on the box, if you still have that.
