That's odd. It should work. It works for me.
I'm swiping down to access the Control Center and clicking Screen Mirroring. When I do, the AirPlay supported devices appear. I have more than will show, so I have to scroll down on my phone to find all of the devices. Only three show, but when I scroll up or down, I can see the others. Are you able to scroll all the way to the top or bottom, if you see three? Are you sure there aren't more just off-screen?
