If all the boxes show the streaming channels but then after you purchase them you find out the model is not one that streams all the channels? How do you know which stores and which models you’re able to stream all the channels?

Have an example in mind in terms of a specific app/channel and a specific model that doesnt support it, and specific image of a box cover (attached here, or linked)?
For the most part, as long as you live in the US and purchase the newest Roku models, you should be able to stream all the channels you are seeing on the box. The limitations you hear about are "generally" based on geographical locations (outside the US), and older Roku devices. You can find the newest Roku devices and models available at https://www.roku.com/products/players and https://www.roku.com/products/roku-tv and then use that info to purchase online or offline at a store.

Look closely for a disclaimer on the box that says something like, "not all channels are supported in all regions".
Yes, AppleTV. I happened to get a free year when I upgrade my phone. Never thought my Rokus wouldn't be compatible models. If you can download the app then you should be able to use it. They should make it that if you cannot use it, you shouldn't be able to download it. Just went and looked at their packaging, they all seem to have the Apple as the 3rd logo. I wen to the store to check the packaging there and saw no restrictions.
I wish, but it doesn't. I just tried adding it to the shopping cart to see if it will let me choose a model or have limitations. There are no options. Seems like the luck of the draw and both of mine have extra letter(s) at the end of the model numbers. I keep looking at the packaging and none have a "disclaimer" on them. The channel checker shows AppleTv. Only when I kept getting the errors did I follow the link that explained why it does not work.
What model do you have that is not supported?
As far as I know, you don't have to worry about a letter at the end of a number like 3930X vs 3930R.
What are the model numbers of your Roku devices that you are trying to using AppleTV on.
Settings...System...About...
The model number is how to determine compatibility, not the name of the device.
What Roku model #s do you have?
They are Ultra 4670RW and stick+ 3810X
