Private listening on stream bar using my ultra remote?

I have an ultra, with headphone jack in the remote. I use it all the time.

I want to upgrade to stream bar, but I read it does NOT have headphone jack on its remote like the ultra.

Can I pair my older ultra remote with the new stream bar, and use the headphone jack as I did with my ultra?

Yes, most definitely you can pair the ultra remote with headphones jack and use it with Roku streambar.
