Several years ago I bought an ONN Roku TV and lost the remote almost immediately. No problem, I just downloaded the app and used that as a remote! No problems at all.

I stopped using the TV for like 2 years. I have a new phone. We just moved.

I was excited to use this TV again, and as soon as I plugged it on I realized....How the **bleep** am I supposed to connect this to my WiFi?

Unless you can configure your new Wi-Fi to match the last network the TV connected to (same SSID/network name and password), you need a physical remote.  Many universal remotes support Roku TVs or you can get the simple TV remote from Roku:
