just got a roku streambar, which as per your description in the website is able to do airplay.
however, the option DOES NOT APPEAR in the settings menu.
i already sent this question to customer support and the answer was to enable it in the settings menu, however, as I said, the AIRPLAY OPTION DOES NOT SHOW in the seetings menu. (i also own a Roku ultra and i enabled it without problems - just for the record).
i also updated the firmware as soon as i set up the streambar. the model is 9102R
why is the airplay option not available?

(you probably mean model 9102, not 9120)
You need to message @RokuDanny-R and provide him with: account email/model #/serial #/Device ID/location (country) and a brief description of the problem and he can assist you further.

It was simply not installing for some devices, and for others it was due to their location (not in the US - the AirPlay2 functionality seems to be limited to certain countries/staggered rollout).
This is why you need to message @RokuDanny-R with the information.

Where are you currently located? Can you provide us with your Roku device serial number found in Settings > System > About?

Same device same problem here. Currently in Canada. Serial number YL00CS018354.
The thing is PM doesn't seem to be available for new users. At least for me.
