Depends on the hotel, entirely. Many I've been to have an open HDMI port (as well as physical buttons on the TV to change input), even if the remote is useless. Some only have the one HDMI port and it's locked down with the in-room system. Others require a little creative engineering, but you can make it work.
That said, I still prefer my laptop in hotels, and occasionally connect to the TV with an HDMI cable if it's in proximity to the desk. Much less of a pain than dealing with setting up the Roku.
