When I try to watch Both apps "Dennis the Menace" and "Father Knows Best" they say there are several options to watch .. there is ROKU option which it says is free, then several others that require a TRIAL ... Naturally I click on ROKU for free and it brings up one of the options that requires a TRIAL ... Why is that happening ?

It may depend on which episode you're trying to watch. For Dennis the Menace on "The Roku Channel", I only see Seasons 1, 3, and 4, and not all episodes within those seasons.
