I am giving perhaps more detail than necessary because I am not sure what is causing this issue.
Setup: Roku Ultra (December 2020 version) at Home and Roku Ultra (older version) at grand kids same problem with Plex.
I have a Windows media server with Plex Media server installed with a large HDD array for my main movie selection. I set up a Raspberry Pi 400 with a 5 TB portable HD with movies that I copy from my main server and could easily carry to show to my grand children on our "movie night."
At home, the Windows Plex app and the Windows Plex media server app (btw, the Roku Plex app is far better than the Windows version! I normally do not use the Windows Plex app any more.) show both servers when connected and I can access the far left tool bar and either select the server or go to More+ to get the server.
But this is not always the case on the Roku Plex channel. At first I could access the tool bar, but then suddenly I could not. This morning I shut everything down and restarted and could access the tool bar again, and both servers showed up in the tool bar as expected. Previously, I had to click on More+ to open the server. The access of the tool bar seems to come and go and when gone, is frustrating because I cannot watch movies from a selected server.
At the grand kids home (has an older Roku Ultra), sometimes I can access the far left tool bar and sometime not. (mostly not) If not, I cannot access the Plex Media Server on the Raspberry Pi at all. There is no way to get to the tool bar.
So my question is how do I access the tool bar when it seems that I am locked from access (by this I mean that no possible remote control button pushing allows movement and selection of the tool buttons)? Also, perhaps related, when this occurs the tool buttons do not interactively light up in yellow.

I just tested Plex on my Premiere. I had to log back in, as I haven't used it recently on this player. But once I was on the main screen the left directional button moved me to the left menu, and I scrolled down to the bottom and clicked the 3 dots, and that provided me with the menu to change servers. So it's working on my Roku players. According to the home screen info, the Plex channel is version 6.8 build 3.

Not sure it makes a difference but the issue is showing up on the Ultra, two versions of that device.
Also, I should refine my question:
How do I get around a locked far left tool bar?
As I noted, the tool bar works fine generally, but when adding a second server or for some reason on my grand kid's system, then it can become inaccessible. I suspect most people if they try may not see this issue. Like I said I am unclear about how to reproduce this locked tool bar issue, that's why I gave all the particulars.

I have three different models of the Ultra, and I'll try at least one of them after I finish working for today. But that's unlikely to be an issue. I too have multiple Plex servers on my network, so I have to be able to switch between them as well.
The first step when having a problem with a channel on a Roku is to remove the channel, reboot the Roku (critical step, don't skip), then add the channel back in. You have to log back into the channel when you do this, but it clears any potential problems with corrupted channel code. Just don't forget the reboot. Either use the System Restart function in the menu or pull the power for 30 seconds.
So, I also tried Plex on my two newest Ultras, the 4670 and 4800. Plex worked as expected on both, and I could switch between my two Plex servers. I can't say why you're having a problem, but it doesn't appear to be something affecting all devices.
If I reboot the Roku, then use Plex, I can access the left tool bar. After watching something, I click the Roku remote home button. The next time I use Plex, the left tool bar is unaccessible. The only way to access it is to reboot the Roku. I can't remember when this problem arose, but it wasn't too long ago. (One month? Two months?)
