None of my channels will stream. I have rebooted. Power restarted, unplugged both my router and television. Does anyone have any advice?
If you can, try connecting your Roku device to your phone's hotspot. If it works with that connection, contact your ISP to figure out what the problem is.

I'm having the same issue. The steps I've taken,
I have an "excellent" connection but the apps either open but then close right away or won't open at all

Have you also tried rebooting your Router? Sometimes, a glitch in the internet connection may cause problems such as these, and simply restarting the router might resolve the issue.
