I just signed up for Paramount +. I thought you could watch Yellowstone on Paramount +. Can anyone assist me.

You should be able to find Yellowstone on Peacock.

(It is showing live on the Paramount network, but Paramount+ and the Paramount network don't have exactly the same set of shows.)

Paramount originally released Yellowstone on its Paramount cable channel, before Paramount+ streaming channel was created. Paramount continues to release new seasons of Yellowstone on Paramount.

In order to view Paramount on streaming devices like Roku, the Paramount app requires you to be paying for it via a subscription to a paid "tv provider" account (cable, satellite, etc.) that carries the Paramount channel.

For those without a paid Paramount "tv provider" account, for whatever reason known only to them, Paramount chose to license Yellowstone streaming to NBCUniversal's Peacock service, instead of Paramount+.   Yellowstone requires a paid premium subscription to Peacock and is not available on the free version.
