This worked for HBO Max and I assume it will work on all channels that have suddenly switched to Spanish.
1. Start program that's in Spanish
2. Click "*" on Remote and go to Accessibility and Captions.
3. Change Audio Track to English

That will certainly work for the content with multi-audio tracks.
Some of the issues stem from the fact that the wrong audio track is included or the other audio tracks are missing so the user can't select the appropriate audio track (because it is missing altogether).
