When we load the channel, it now comes up with three totally different profiles and is now only offered in Spanish. I managed to figure out how to delete the profiles and change it back to Spanish - however, it's back to Spanish after I painstakingly "reset" the channel.
ANYONE?? ANYONE?? I would be grateful to know if you think it's a hacking of my account or the channel is broken. (and yes, we've performed all of the obvs reset/reload/resart of Roku)

Some programs include soundtracks in alternate languages. Some channels will retain this setting from program to program.
The Roku default method of accessing your choice of audio track is to press the * key on your Roku remote while viewing the program and examining the options presented.
But more and more channels are not using the Roku default but substituting their own method of access -- I'm guessing this is so they will have consistent controls with versions of their app running on platforms other than Roku. I don't happen to be at home to check how Disney+ does this. Often these options are accessed by pressing the up and/or down cursor control keys while viewing the program to pop the channel's own control options on the screen.

The issues I have are upon launch. Before any of what you offer as a remedy. The profiles are not those KD my family, and they're in Spanish.
I have deleted said profiles, re-loaded the app, added the intended profiles of my family- however ( stressing this part) the instructions and language to set up remain in Spanish. I am totally at a loss here.
