I have just purchased a Roku Premier, set up and registered an account.
I only want to view Youtube on my TV. How do I do it?
If the initial setup did not install YouTube by default in the Roku home page channel grid, add it via the Streaming Channels link on the left side of the screen. Any channel(s) you add will be added at the bottom of the channel grid.
Click on the YouTube tile in the channel grid to load the channel.

Thank you for the advice. I did as you suggested and when I typed 'Y'
a list appeared on the right headed by Youtube but how do I select it?
Push the right arrow button on the remote repeatedly to move the highlight to the right until the highlight moves to the suggestion list, then up or down if necessary to highlight the YouTube entry. Then press Enter to select it and follow the prompts.
In general, learn to use the arrow keys to navigate around the screen.

Possibly.
The Roku Media Player (RMP) app can access a computer on the same network as the Roku and play video and audio files, and display images, provided the computer is running a DLNA compliant server. Ones I've used are TVideo and Serviio but there are others.
RMP is pretty fussy about the videos it will display, however, so you'd have to try them and see. Ones it won't run can probably be transcoded into formats RMP can handle, either automatically when served by a DLNA server that is capable of transcoding, or manually ahead of time by various utilities. I'm no expert in this regard, so I'd suggest doing a web search for information on transcoding if you're interested.
I do not have the option to add YouTube , even when I go to streaming channels

Where are you currently located? Please be aware that channel availability/access on Roku devices will vary from region to region. A Roku device will work in any location, however, channels may not be available on your device in that location, based on each channel provider's discretion. For more information, you'd want to contact any specific channel/service provider to inquire further about whether they offer their channel/service on the Roku platform in your region.
