Can I just get one network from Roku

Yes.  You can get 0 if you want and just use the free Apps/Channels available across the Roku platform or you can use various subscription paid App/Channels, or incorporate with your cable provider to stream their content through your Roku.

You do not need a cable subscription to use the Roku.  It is merely an option. 

You add only the Channels/Apps you want to the Roku. (Can setup your Roku to be absolutely free if you want to, or add paid Subscription Services as you wish)

Now, since you titled your post "Ovation Now", that particular channel does require a cable/satellite subscription to access that content on Roku.  You would simply stream Ovation Now to your Roku device and only pay your cable company the subscription fee.

With some internet research, you may be able to find a free Channel(s) on Roku that has the same or similar programming as Ovation Now, thereby eliminating the cable subscription required for Ovation Now.  Even within the Roku itself, if you search for a program, it will tell you what Channels that program is currently playing on (ie Roku Channel, Filmrise, Prime, etc)
