Roku devices linked to a single user account puts the same channels on all devices. Remove a channel from one, and it's removed from all. So that's one possibility. Another might be someone is pranking you with the Roku app on a phone and removing the channels with the app.

There are only 2 people who have access to my network and I'm the only one who has the app loaded on a device. So unless someone has hacked my network and removing channels is the only thing they have done over the last 2 months then I doubt this is the case. But it was worth checking out!
