I am exploring what channels to add to my account. I have Prime and Netflix, and I have signed up for free trial of Smithsonian channel. I was looking thru channels and see that Apple TV and Disney + listed as installed. I have not used them and do not want to sign up for a subscription. Does "installed" mean they are just available to me or do I now have a subscription? In my account, only the free trial Smithsonian is listed. I don't want to get stuck paying for a month if something I don't want.

No, installed doesn't mean that you subscribe to them. You can install any channel you want, but if they require a subscription to view any content, you have to do that separately.
If you aren't intending on using a channel, you can uninstall them by highlighting the icon, pressing the * button, then select remove. This also frees up storage space for channels you might actually want.
