I ran my cameras specifically off of these same exact micro sd cards without WiFi for almost a year but now that I have connected all of my cameras to WiFi none of them will recognize the micro sd is even plugged in.

Depending on the brand and how often they are written to, SD cards can fail without notice. Even name brands with lifetime warranties, such as Sandisk, can fail over time. Cheap no name brand SD cards are even less reliable.  Cameras tend to write a lot to a card or hard drive depending on their location and how much activity the area gets.  Try replacing the cards with new SD cards and see if that helps.
