I need to know how much  I'm I paying for my recent  hook-up to Hulu. Also is there away to get Fox News complete episodes live without having to maintain my current Dish provider? thanks.

There's no charge for hooking up anything. If you're subscribing to Hulu, it depends on to which service plan you subscribed. Basic Hulu service is $6/month. Did you subscribe through your Roku device? Did you subscribe to Hulu directly? Either should have presented you with a confirmation email with the amount of your subscription.

Yes, you'll need to subscribe through a live streaming service. Sling TV Blue is $35/month. Vidgo is $55/month. Hulu+Live TV, YouTube TV, and Fubo are $65/month. DirecTV Stream is $70/month.
