This sounds like this subscription to Peacock was not made through Roku, but directly with Peacock on its website, or through some 3rd party other than Roku.
Wherever this subscription was created, that's where you must go to cancel it.
Do the individual charge descriptions on your bank or charge card statements give any indication of where these charges originate?
