You can't. Any devices linked to the same Roku account will have the same channels/apps and use the same billing method. The only way is to have separate Roku accounts for yours and her devices.
I'm assuming by "compromising" your account you mean making a purchase that is charged to the payment method listed in your account.
You can log into your account at https://my.roku.com. In the payment area you can remove your current payment method.
Now here's where guesswork starts on my part. With no payment method on file, I expect each purchase will require the purchaser to enter a payment method for that purchase. Perhaps someone set up this way can confirm or contradict this.

Maybe the simple solution is to have a separate Roku account for her. She could have her own apps, regardless of what apps you had. For example, if you had Hulu but she didn't like Hulu, she could have a device without Hulu on it.
As it stands, anything added to any device on a single account will appear on all devices on that account. Likewise, anything removed from one will be removed from all.
If you want them to be on the same Roku account, add a PIN to your account and don't tell her what the PIN is. Then, neither she nor any visitors who use her Roku could purchase anything without the PIN.

You say all 3 are yours. Since you're concerned about your account, it sounds like the ones at your mother's house are linked to your Roku account.
It's not clear if you want to be able to access the ones at your mother's house as though they were yours when you are there, or if you want them separated from your account completely, so we don't really know what to suggest.
As suggested by @renojim and @DBDukes , the easiest way to separate your mother's devices from yours is for the Rokus your mother uses to be linked to her own account instead of yours. This is accomplished by doing a Factory reset on her devices (Settings > System > Advanced system settings > Factory reset) and setting them up as new devices, linking them to her account instead of yours, with her own payment method set.
