Set up to home theater system

Please help. I am looking at cutting the cord and wondering what the set up would be with an older home theater system that has only one HDMI (out) port on the receiver? I have a newer model Epson projector with HDMI ports. The current setup is: HDMI from cable box to projector; audio cables from cable box to RCA connectors on receiver. Since the HDMI port on my receiver is (out), where would I plug the Roku device into? And how would I get sound to my speakers?

    Having one HDMI out on the receiver is common, but are you saying there are NO HDMI ins???  I'm wondering what the point of an HDMI out is with no HDMI ins.
