I have roku ultra and I can’t watch the roku channel on my ipad and watch a different program-on the roku channel on the tv. The app forces me to connect to the roku device which basically forces me to watch the same program on both.

My experience is only with the Android Roku remote app version. I expect the iOS version would be about the same...
From the initial Roku remote app screen, scroll down (maybe way down) to find The Roku Channel section and click the Browse link to see available content. When you click on a program to watch, one of the options you are presented is "Watch now on mobile" to view it on your phone or tablet.
