I’ve followed the recommended steps: delete YouTube, turn off the TV, turn on the TV, reinstall YouTube, sign in.
After doing this, it will keep me signed in for a few days… and then it goes back to making me sign in every single time.
I don’t have this issue with any other apps—and I have seen others post about only having this issue with YouTube. I wish Roku would just fix the dang app, but is there anything I can do in the meantime?
Except for the Roku Channel, Roku doesn't create the apps. That is the responsibility of the channel owner, in this case YouTube.
I am now required to sign in every time and others have noted this behavior. I suspect it is a deliberate change and not an error. Perhaps an effort to curb password sharing?
I am paying for no ads. Maybe this only affects people in that category?
By signing in, do you mean actually entering passwords or using a phone/computer to authorize? There was a change a few weeks ago where it asks which profile to use. This is not unique to Roku, as it also started on a Fire TV device, too. It's not a full sign in, just a profile selection.

After removing the channel, but BEFORE reinstalling it, did you RESTART** your Roku to clear its memory cache? Without the restart you may not get a clean reinstall. This is not a cure-all but at least it will assure you of having an uncorrupted copy of the current channel app.
Depending on your Roku model number you'll find the "System restart" option under either "Settings > System > Power" or under "Settings > System". If you don't have sufficient control to use the menus, or if it is just more convenient, you can also restart by pulling the power plug for a short while, then plugging it back in.
**On a Roku TV with "Fast TV Start" enabled, turning the TV off/on only puts you in/out of a low power standby state, it does NOT give you a complete restart. Use the methods above.
